Here The method of preparation of the Egg Roasted Coconut Stew or Anda Bhuna Nariyal Masala is given Ingredients 4 Eggs Boiled in water with salt for 15 minutes and deshelled with superficial cuts 100 gms of grated coconut(coarsely ground almonds also can be used) 15 gms of coriander seeds 10 Shallots whole 3 Kashmiri chillies 50 gms of garlic 10 black pepper corns 2 Spoons of fennel seeds 2 Green chillies One and a half onions cut into pieces 1 Tomato cut into pieces 25 gms of ginger cut into pieces Salt to taste A quarter spoon of turmeric powder 10 ml of oil 300 ml of water Preparation Heat a pan and put in the fennel seeds, half the garlic,shallots,kashmiri chillies , coriander seeds .pepper corns and the grated coconut and saute till the grated coconut turns a golden brown. Let the mixture cool after taking off the flame and put it in a grinder and grind well with 25 ml of water. Heat the pan and pour in 10 ml of oil. Put in the onion pieces,ginger and rest of the garlic and saute till the onions are a golden brown.Add the tomatoes and the green chillies and saute well. Add the ground coconut - shallot-fennel mixture to the pan and keep on sauteing . Add the turmeric powder and salt and saute and mix. Keep on sauteing till the oil is released from the mixture. Add the 4 eggs and saute and mix slowly making sure not to brak the eggs. Pour in 300 ml of water and mix all the ingredients in the water.
